The tastiest Banana Bread on the market and it’s Gluten Free too. Full of wholesome ingredients and a sprinkle of Boab powder, an Australia superfood full of vitamins C and nutritious vitamins and minerals, this mix is perfect to prepare on Sunday, slice up and serve for snacks that satisfy.

Paleo, Gluten free, Dairy free, Grain free, Refined sugar free, No added nasties.

Ingredients
Almond meal, coconut palm sugar, tapioca flour, Kimberley wild harvested boab powder cream of tartar, bicarbonate soda, cinnamon, psyllium husk, sea salt, vanilla powder. 

TO PREPARE:
3 medium bananas (35%), 1⁄2 cup coconut oil or melted butter, 2 free range eggs.

ADDITIONAL INGREDIENTS REQUIRED:
3 medium bananas, ½ cup organic coconut oil melted, 2 free range eggs, 1 tablespoon coconut sugar (optional).

EQUIPMENT REQUIRED: 
Measuring cups, small and large mixing bowl, fork, wooden spoon, standard size loaf tin, baking paper, spatula, cooling rack.  

METHOD: 
1. Preheat oven to 160°C.
2. Grease the loaf tin with some excess coconut oil and line with baking paper.
3. In a large mixing bowl place banana bread mix and make a well.
4. Mash the bananas in a small mixing bowl and add to banana bread mix, in the same small bowl lightly beat the eggs and add to banana bread mix.
5. Add melted coconut oil and mix with a wooden spoon until well combined.
6. Using a spatula scrap the mixture into the tin and smooth out evenly.
Optional step: sprinkle coconut sugar over the top of the banana bread - this step gives
the loaf a delicious caramel top and is highly recommended!
7. Place the banana bread in the oven for 35 to 40 minutes. Test by placing a skewer or
small knife in. If it comes out clean its ready, if not place back in oven for a further 5 minutes.
8. Remove banana bread from the oven and place on a wire rack for 5 minutes. Carefully remove
the banana bread from the tin and place onto a cooling rack for a further 15 minutes.
Enjoy as is or for a real treat why not try it lightly toasted and topped with
some seasonal fruit and coconut ice cream! Yum!

For best results eat within 48 hours or slice and freeze for up to 3 months.
