While following the Gatherer Hunter way of life bread is restricted. Most shop bought gluten free breads are full of additives, sugars and unhealthy flours. So I decided after cracking the code for great quality nutrient dense Paleo bread, I would turn my attention to creating a great focaccia bread and this is the result! You can use any topping you like but I found the combination of fresh chilli, garlic, rosemary and olives to be the tastiest!! 

Ingredients
Organic tapioca flour, Australian almond meal, organic psyllium husk, Australian flaky sea salt, cream of tartar, bi carbonate soda

Added ingredients
1/2 cup filtered water, 2 x free range eggs, 40ml extra virgin olive oil, 1 + 1/2 teaspoon apple cider vinegar, pitted olives, red chilli, garlic, rosemary

Focaccia extra ingredients required
½ cup filtered water, 2x free range eggs, 40ml extra virgin olive oil, 1 ½ teaspoons apple cider vinegar

Focaccia topping
2 teaspoons extra virgin olive oil, pinch flaky sea salt, 1 to 2 sprigs of rosemary, 1 garlic clove finely chopped, ½ chilli finely chopped, 1/3 cup olives of your choice pitted and chopped in half.

Focaccia equipment required
Measuring cups, large mixing bowl, small mixing bowl, hand whisk, medium sized baking tray, baking paper, wooden spoon, spatula, wire rack. 

Focaccia method
1. Preheat the oven to 180.C.
2. On a medium sized baking tray place a piece of baking paper.
3. Place the dry mix in a large mixing bowl and make a well.
4. Whisk all wet ingredients together in a small mixing bowl.
5. Place wet ingredients into the well and gently mix until combined.
6. Let stand for 5 minutes then place into the baking tray.
7. Smooth mixture down until evenly spread to a height of roughly 1 to 2cm.
8. Drizzle with extra virgin olive oil and flaky sea salt.
9. Evenly spread the remaining toppings over the focaccia.
10. Place into the oven and bake for 15 to 20 minutes or until golden brown.
11. Place on a wire rack to cool.

GH Produce Paleo breads contains no added preservatives so breads are best eaten fresh from the oven or lightly toasted the next day, just like good French bread! Store in an air tight container for 1 to 2 days or slice and freeze once cooled.
