While following the Gatherer Hunter way of life bread is restricted. Most shop bought gluten free breads are full of additives, sugars and unhealthy flours. So I decided to crack the code for great quality nutrient dense Paleo Cassava bread, that will satisfy those bread cravings and this is it! Our Cassava flour is 100% Australian grown and sourced from a family owned farm in Queensland. The farm uses great practices with all cassavas being spray free. 


Ingredients
Organic tapioca starch, Australian almond flour, Australian cassava flour, organic psyllium husk, Australian flaky sea salt, cream of tartar bicarbonate soda

Added ingredients
3/4 filtered water, 3 free range eggs, 40ml extra virgin olive oil, 2 teaspoons apple cider vinegar

(Prepared nutritional values are based on the addition of extra virgin olive oil, eggs, apple cider vinegar and water as set on the packet)

Bread mix extra ingredients required
3/4 cup filtered water, 3x free range eggs, 40ml extra virgin olive oil, 2 teaspoons apple cider vinegar

Bread Topping
2 teaspoon extra virgin olive oil, ½ teaspoon flaky sea salt, 1 tsp sesame seeds

Bread Method
1. Preheat oven to 180.C
2. Line a medium sizes loaf tin with baking paper.
3. Place the dry mix in a large mixing bowl and make a well.
4. Whisk all wet ingredients together in a small mixing bowl.
5. Place wet ingredients into the well and gently whisk until combined.
6. Let stand for 2 minutes then place into the loaf tin.
7. Smooth mixture down into the tin with the back of a wet spoon.
8. Drizzle with extra virgin olive oil, salt and sesame seeds.
9. Bake for 25 to 30 minutes or until golden brown and hollow sounding when tapped.
10. Remove from tin and place bread on wire rack to cool.
11. Enjoy fresh from the oven or toasted the next day.
12. Store in an air tight container for 2 days or slice and freeze.
