Cooking Classes

My cooking classes focus on local seasonal produce, ethically raised and caught fish, poultry and meat, many of which are paleo-inspired. I catch my own fish, grow a lot of my own produce and also love to forage!

This style of cooking is not just a diet for me, but a lifestyle that also helps in managing my food allergies. I have turned my all time favourites into healthy nourishing dishes that are guilt free and delicious. I am looking forward to sharing them with you all!

How the classes work is you choose one of the pre designed classes from the list below, then we organise a time and I’ll come to you with the ingredients and equipment required. You decide on how many people are coming and the tough choice of what wine to drink!

PALEO BAKING

Learn how to replace those carb loaded goodies that you crave while embracing the paleo lifestyle with some simple and delicious recipes. Once you’ve tried these healthy alternatives there will be no going back!

  • Paleo ruben bagel, sauerkraut, fancy sauce
  • Apple + sandalwood nut cake, honey + cinnamon parfait

Paleo fast food

In this class you will learn some quick nutritious alternatives to some of your favourite take away eats.

  • North west prawn + quinoa nasi goreng, asian vegetables, crispy garnish
  • Paleo crumbed free range chicken, kohlrabi slaw
  • White sweet potato fries, desert lime mayo
  • Ceviche fish of the day, cassava tacos, guacamole, red cabbage, pickled jalapenos

Paleo breakfast and brunch

Breakfast is the most important meal of the day so why not expand your paleo breaky repertoire, with these nutritious breakfast dishes that you can enjoy anytime of the day.

  • Banana pikelets, citrus curd, coconut parfait, fresh strawberries (seasonal)
  • Zucchini fritter, fried egg, smoked red pepper sauce, nitrate free bacon, fine herbs
  • Green breaky bowl, kale, broccolini, herbs, poached eggs, savoury granola, avocado, lemon

Winter warmers

I love the winter months and for me you just can't beat a hearty bowl of soup and a glass of red on a cold wintry night! In this class I'll teach you how to cook the food I love to make during those months, they are nutitious and taste amazing!

  • Slow cooked Gingin grass fed beef brisket, organic kale, rosemary + saltbush sweet potato
  • Free range free chicken + winter vegetable soup, black quinoa, parsley pesto
  • Grain free apple + rhubarb crumble, almond milk custard

Plant based

If your following a plant based lifestyle or want to learn how get more vegetables in your diet then this is the class for you! In this class I'll teach you some tasty recipes that even the biggest carnivore will love!

  • Mexican bowl, refried black beans, smokey corn, red pepper salsa, cassava tacos, guacamole, cashew sour cream, garden veg
  • Roast pumpkin + chickpea salad, dukkah, tahini dressing, herb salad
  • Plant based chocolate caramel slice
  • Black rice pudding, pineapple mint salsa, coconut, peanut crunch

from the paddock

Love your meat and want to become a BBQ master? Well this is the class for you! We will cook a range of local, quality ethically raised meats and discuss what to look for when purchasing your meat to get the best cut possible.

  • Free range cajun chicken, smoked eggplant, tomato herb salad
  • Female free range pork chop, apple + fennel slaw
  • Gingin grass fed beef sirloin, salsa verde
  • BBQ field mushrooms, goats curd + thyme

From the sea

In this class I’ll teach you things like what to look for when buying a fish to ensure you are getting the freshest fish possible and what varieties are good for what style of cooking. You will also learn how to become confident in cooking fish in a number of different methods.

  • Tempura whiting + vegetables, wasabi mayo, tamari
  • Whole baked snapper, green papaya salad, chilli lime dressing,
  • Pan-fried barramundi, celeriac puree, citrus avocado fennel salad

TERMS AND CONDITIONS

A $100 deposit is required to confirm your booking. This deposit is non-refundable for cancellations with in 48hrs of your booking, to cover ingredient costs. The remaining balance is payable at the time of the class.

Design your own menu choices must be confirmed 72 hours prior to class or the menu will be decided for you.

GH Produce line items will be available for purchase at a 20% discount at the class or can be pre-ordered prior to the class.

If you have any special requests whether it is you want to learn something not on the menu or special dietary requirements don’t hesitate to ask. I can do anything!
